No Bake Chocolate Eclair Cake

This no bake chocolate eclair cake features layers of graham crackers, vanilla pudding, whipped topping, and rich chocolate frosting for an easy and indulgent dessert.

Ingredients

  • 1 7 oz package instant vanilla pudding mix
  • 1 tub 8 oz whipped topping (such as Cool Whip), thawed
  • 3 cups whole milk
  • 1 box approximately 3 sleeves graham crackers
  • 1 tub 16 oz chocolate frosting, room temperature

Prepare the Pudding Mixture:

  1. In a medium mixing bowl, combine the instant vanilla pudding mix, thawed whipped topping, and whole milk. Beat the ingredients together using a whisk or hand mixer until the mixture is smooth and well blended.

Layer the Graham Crackers:

  1. Arrange a single layer of graham crackers along the bottom of a 9x13-inch baking dish. Do not overlap the crackers, but feel free to break them to fit the pan snugly.

Add the Pudding Mixture:

  1. Spread half of the prepared pudding mixture evenly over the graham cracker layer using a spatula.

Repeat the Layers:

  1. Place a second layer of graham crackers on top of the pudding mixture. Then spread the remaining half of the pudding mixture over the second layer of crackers. Finish by placing a final layer of graham crackers on top.

Freeze to Set:

  1. Place the dish in the freezer for 30 minutes. This step will allow the dessert to firm slightly, making it easier to frost.

Apply the Frosting:

  1. After 30 minutes, remove the dish from the freezer. Spread the chocolate frosting evenly over the top graham cracker layer. Ensure the frosting reaches the edges for complete coverage.

Chill Before Serving:

  1. Cover the dish with plastic wrap or a fitted lid and refrigerate for at least 4 hours before serving. Chilling allows the graham crackers to soften into a cake-like texture.

To prepare this recipe as gluten-free, substitute traditional graham crackers with a certified gluten-free version.
