Missouri Casserole Recipe

Ingredients

  • 7 medium russet potatoes peeled and thinly sliced
  • 3 large yellow onions thinly sliced
  • 1 ½ pounds ground beef 80/20 recommended for flavor
  • 1 large can 28 ounces of tomatoes (diced, crushed, or stewed)
  • Salt and freshly ground black pepper to taste

Instructions
 

Prepare the ingredients

  1. Begin by preheating your oven to 350°F (175°C). Peel and slice the potatoes into approximately ¼-inch thick rounds. Thinly slice the onions.

Assemble the casserole layers

  1. In a 9x13-inch baking dish, create the first layer by arranging half of the sliced potatoes evenly along the bottom. Season lightly with salt and pepper.
  2. Next, distribute half of the ground beef evenly over the potato layer. Spread half of the sliced onions on top of the beef. Repeat this process with the remaining potatoes, ground beef, and onions to form additional layers. Again, season with salt and pepper as desired.

Add the tomatoes

  1. Pour the entire contents of the canned tomatoes, including the juice, evenly over the layered ingredients in the dish. Ensure the liquid is evenly distributed to help cook the potatoes thoroughly.

Bake the casserole

  1. Cover the baking dish with aluminum foil or a tight-fitting lid. Place in the preheated oven and bake for 1 hour. After 1 hour, remove the cover and continue baking for an additional 30 minutes, or until the potatoes are tender and the top is slightly browned.

Rest and serve

  1. Allow the casserole to rest for approximately 10 minutes before serving. This will help the layers set and make it easier to portion.
