Ingredients

  • 1 10.5 oz can of cream of chicken soup
  • ½ c of cottage cheese
  • ½ c of sour cream
  • 4 oz of cream cheese softened to room temperature
  • 1 ½ tsp of Creole seasoning
  • ½ tsp of onion powder
  • 1 tsp of garlic powder divided
  • 5 c of shredded rotisserie chicken
  • 1 tbsp of freshly chopped parsley
  • 30 buttery round crackers like Ritz, crushed
  • 4 tbsp of melted unsalted butter
  • 1 c of shredded mozzarella cheese
  • 1 tsp of sliced scallions or to taste

Instructions
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl. Mix together the cream of chicken soup. With cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and ½ teaspoon of the garlic powder. Until the mixture is smooth. And well combined.
  3. Gently fold in the shredded chicken. And chopped parsley. Ensuring that the chicken is evenly coated. With the creamy mixture.
  4. In a separate medium bowl. Combine the crushed crackers, and melted butter. And the remaining ½ teaspoon of garlic powder. Stirring until the crackers. Are fully coated.
  5. Evenly spoon the chicken mixture. Into an 11x7-inch or 9-inch square baking dish. Sprinkle the mozzarella cheese evenly over the top. Followed by the cracker mixture.
  6. Place the baking dish. On a foil-lined baking sheet. To catch any drips. And bake in the preheated oven. For about 35 minutes. Or until the cracker topping is golden brown. And the edges of the casserole are bubbly. If desired. Garnish with sliced scallions before serving.
