Prep Time 15 minutes
Cook Time 30 minutes
This Mexican-Style Impossible Taco Pie is everything you love about taco night, but with a fun twist. It’s got layers of seasoned beef, green chiles, and gooey cheddar cheese, all baked into a fluffy Bisquick crust that puffs up beautifully in the oven. The best part? It’s ridiculously easy to throw together and perfect for those nights when you need something comforting but don’t want to spend hours in the kitchen. Just a handful of ingredients, one pan, and about 45 minutes—boom, dinner’s done. It’s the kind of meal that brings everyone to the table, excited for something warm and cheesy.
6 Servings

Ingredients

  • 1 1/2 pounds of lean ground beef
  • 1 packet of taco seasoning
  • 1 4.5 ounces can of diced green chiles
  • 1/2 c salsa
  • 1 c grated cheddar cheese
  • 1/2 c Bisquick mix
  • 1 c milk
  • 3 large eggs
  • Kosher salt and freshly ground black pepper to taste
  • Finely chopped cilantro for garnish

Instructions

  1. Start by preheating your oven to 400°F, and while that’s warming up, give your 9-inch pie dish a nice coating of nonstick spray to make sure everything comes out easily later.
  2. Heat a skillet over medium heat and cook the ground beef until it's fully browned and no pink remains. Make sure to drain off any extra fat, then sprinkle in the taco seasoning. Give it a good stir to mix all those flavors in.
  3. Next, add the diced green chiles and salsa to the beef, stirring until everything is well combined. Once that’s done, transfer the beef mixture to your greased pie dish and spread it out evenly. Now, sprinkle the grated cheddar cheese over the top to cover the beef mixture.
  4. In a separate bowl, whisk together the Bisquick, milk, and eggs until smooth. Pour this mixture right over the beef and cheese in the pie dish, making sure to cover everything evenly.
  5. Pop it in the oven and bake for about 25-30 minutes, or until the top is golden brown and set. Once it’s out of the oven, let it cool for a few minutes, then serve it up with your favorite taco toppings—think sour cream, guacamole, or maybe some fresh cilantro—and enjoy!

Notes

If you’re looking to make this recipe gluten-free, it’s totally doable with just a couple of simple swaps. First, grab a gluten-free Bisquick mix or a similar gluten-free baking mix that works for you. Everything else is pretty much good to go—just double-check that your taco seasoning is gluten-free since some brands sneak in wheat. Once you’ve got that covered, you’re all set to enjoy a gluten-free version of this delicious taco pie that’s just as cheesy, flavorful, and satisfying as the original. And trust me, no one will even notice the difference!
