Ingredients

  • 6 ounces corn chips
  • 2 pounds lean ground beef
  • 2 large eggs
  • 1 1/2 c corn and black bean salsa or your choice of chunky salsa
  • 1 ounce taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 c shredded Mexican cheese blend

Instructions
 

  1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by lining it with aluminum foil and spraying it with cooking spray.
  2. Crush Corn Chips: Place corn chips in a large Ziploc bag and crush them using a rolling pin until coarsely ground.
  3. Mix Ingredients: In a large bowl, combine the crushed corn chips, ground beef, eggs, 1/2 cup salsa, taco seasoning, salt, pepper, and garlic powder. Mix thoroughly with your hands.
  4. Add Cheese: Mix in 1 cup of the shredded cheese into the meat mixture.
  5. Form the Loaf: Transfer the meat mixture to the prepared loaf pan, pressing it in evenly.
  6. Add Topping: Spread the remaining 1 cup of salsa evenly over the top of the meatloaf.
  7. Bake: Place the loaf pan in the preheated oven and bake for 40 minutes.
  8. Add More Cheese: Remove the meatloaf from the oven and sprinkle the remaining 1 cup of shredded cheese on top. Return to the oven and bake for an additional 10-15 minutes, or until the meatloaf reaches an internal temperature of 160°F.
  9. Rest and Serve: Remove the meatloaf from the oven, let it rest for 5 minutes, then use the foil to lift it out of the pan. Slice and serve warm.
