Ingredients

Meatloaf Cupcakes:

  • 1 pound beef mince ground beef
  • 1 onion grated (brown, white, or yellow)
  • 2 small carrots grated
  • 2 eggs
  • 1/4 c grated parmesan cheese
  • 1/4 c tomato ketchup or tomato sauce
  • 1 c panko or breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • Pepper to taste

Mashed Potato:

  • 2 large or 3 medium potatoes
  • 1 tablespoon butter optional
  • 1/2 - 1 c milk

Garnish:

  • Tomato ketchup or sauce
  • Parsley finely chopped (optional)

Instructions
 

Meatloaf Cupcakes:

  1. Preheat oven to 180°C/350°F.
  2. Spray 8 holes of a muffin tin with cooking spray.
  3. Grate onion and carrot into a large bowl.
  4. Add beef, eggs, parmesan cheese, ketchup, panko, garlic powder, oregano, thyme, salt, and pepper. Mix well.
  5. Scoop about 1/2 cup of mixture into each muffin cup, shaping the top into a slight dome.
  6. Bake for 20-25 minutes until browned on top. Remove from oven.

Mashed Potato:

  1. Peel and dice potatoes. Boil or steam until soft.
  2. Drain potatoes, then mash with butter and milk until smooth.

Assemble:

  1. Spread a small dollop of ketchup on each meatloaf cupcake.
  2. Top with mashed potatoes, either by piping or spooning it on.
  3. Garnish with chopped parsley if desired. Serve and enjoy!

Notes

For a gluten-free version. Substitute panko breadcrumbs with gluten-free breadcrumbs. Ensure that all other ingredients are.
