  • 2 medium Honeycrisp or Granny Smith apples cored and sliced (approximately 2 cups)
  • 4 medium carrots peeled and chopped (approximately 2 cups)
  • 3 tablespoons Dijon mustard
  • 4 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preheat the Oven

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure even roasting and prevent sticking.

Prepare the Glaze

  1. In a medium mixing bowl, whisk together the Dijon mustard, pure maple syrup, olive oil, salt, and black pepper. Continue whisking until the mixture is smooth and cohesive.

Coat the Carrots and Apples

  1. Add the sliced apples and chopped carrots to the bowl. Toss gently until all pieces are evenly coated with the maple-Dijon glaze.

Arrange on Baking Sheet

  1. Transfer the coated carrots and apples to the prepared baking sheet. Spread them into a single, even layer to promote uniform caramelization.

Roast the Mixture

  1. Roast in the preheated oven for 25–30 minutes, stirring the mixture halfway through the cooking time. Continue roasting until the vegetables and apples are golden brown and tender.

Serve

  1. Remove from the oven and serve immediately while warm.
