Ingredients

  • 12 ounces shredded mozzarella 3 c
  • 1 c cottage cheese drained
  • 4 scallions chopped
  • 2 eggs beaten
  • 2 teaspoon Italian herb blend
  • Salt and pepper to taste
  • 2 tablespoon olive oil or butter
  • pounds chicken breasts cubed and salted
  • 24 ounces mushrooms sliced thick
  • 2 medium zucchini sliced halfmoons
  • 2 tablespoon grated parmesan

Instructions
 

  1. Preheat oven to 375°F. Lightly grease a 9x13" baking dish.
  2. In a large bowl, combine mozzarella, cottage cheese, scallions, eggs, herbs, salt, and pepper. Set this aside.
  3. Heat olive oil in a large skillet. Sauté zucchini and mushrooms until softened. Then add chicken. And cook until golden.
  4. Drain excess liquid from the skillet. Then mix the contents. Into the cheese mixture.
  5. Transfer everything to the baking dish. Sprinkle with Parmesan. And bake for 30-40 minutes. Until golden and bubbly.
  6. Let it rest for 5-10 minutes. Before slicing and serving.
