Loaded Twice Baked Potato Casserole

This Loaded Twice Baked Potato Casserole is everything you love about a loaded baked potato, but in a creamy, cheesy, and totally sharable casserole! Soft chunks of baked potato are mixed with sour cream, mayo, and sharp cheddar cheese for that rich, savory goodness. Add in crispy bacon and green onions, and you’ve got a dish that’s comforting and crowd-pleasing. It’s perfect for family dinners, potlucks, or whenever you want something warm and satisfying without too much fuss. Just bake it up, top with a little more bacon and cheese, and enjoy!

  • 8 medium russet potatoes scrubbed clean
  • 2 tbsp olive oil
  • 1 pound bacon cooked and crumbled, divided
  • 2 c grated sharp cheddar cheese divided
  • 1/2 c mayonnaise
  • 1 c sour cream
  • 6 green onions sliced, with some set aside for garnish
  • Kosher salt and freshly ground black pepper to taste

Instructions
 

  1. Preheat your oven to 400°F and give a 9x9-inch baking dish a quick spray with nonstick spray to prevent sticking.
  2. Rub each potato well with olive oil, sprinkle with a bit of salt, and place them on a baking sheet or straight on the oven rack. Bake for 45-60 minutes, turning them halfway through, until they’re tender. Let the potatoes cool for about 15 minutes so you can handle them, then lower the oven temperature to 350°F.
  3. Once they’re cool enough, cut the potatoes into bite-sized pieces and toss them into a large bowl.
  4. Add the sour cream and mayonnaise to the bowl and mix everything until combined.
  5. Stir in about 1 1/2 cups of cheese, three-quarters of the green onions, and three-quarters of the crumbled bacon. Spread the mixture evenly into your prepared baking dish and sprinkle the remaining cheese and bacon on top.
  6. Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for another 10 minutes or until the cheese is melted and bubbly. Sprinkle the remaining green onions on top before serving. Enjoy!

To keep this casserole gluten-free, just make sure any ingredients you buy are certified gluten-free. Most of the ingredients, like potatoes, cheese, and bacon, are naturally gluten-free but double-check the sour cream, mayo, and bacon packaging to be sure.
