Ingredients

  • 1 c salted butter softened 2 sticks
  • 1 c packed light brown sugar
  • 1 c granulated sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 1/2 c all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 c quick cooking oats
  • 12 ounces milk chocolate chips
  • 1 c English toffee bits
  • 1 c pecan pieces toasted

Instructions
 

  1. Preheat your oven to 350°F and line two cookie sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, light brown sugar, granulated sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, baking soda, and salt. Gradually mix these dry ingredients into the butter mixture until combined.
  4. Fold in the oats, chocolate chips, toffee bits, and pecan pieces until evenly distributed.
  5. Scoop the dough using a 4 oz ice cream scoop for jumbo cookies, place them on the prepared cookie sheets, and flatten slightly with floured fingers.
  6. Bake for 16-18 minutes until golden and crispy on the edges. Cool on the pan for 15 minutes, then transfer to a rack to cool completely.

Notes

To make these cookies gluten-free. Substitute the all-purpose flour. With a gluten-free flour blend. That includes xanthan gum for binding. Ensure your oats are certified gluten-free as well.
