Ingredients

Streusel Crumb Topping:

  • 1 c all-purpose flour
  • ¼ c light brown sugar
  • ¼ c granulated sugar
  • ¼ tsp salt
  • 6 tbsp unsalted butter melted

Lemon Muffins:

  • 1 ½ c all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1/3 c unsalted butter softened
  • ¾ c granulated sugar
  • 2 eggs
  • 2 tbsp lemon zest
  • 1 tsp vanilla
  • 1 tsp lemon extract
  • 2/3 c Greek yogurt
  • 2 tbsp lemon juice

Cream Cheese Filling:

  • 8 ounces cream cheese room temperature
  • ¼ c granulated sugar
  • 1 tsp vanilla

Glaze:

  • ¾ c powdered sugar
  • 1 ½ – 2 ½ tsp lemon juice

Instructions
 

  1. Prep: Preheat oven to 425°F. Line a muffin pan with paper liners.
  2. Streusel: Mix flour, sugars, and salt. Stir in melted butter until crumbly.
  3. Muffin Batter: Whisk dry ingredients. Beat butter and sugar, add eggs, lemon zest, vanilla, lemon extract, yogurt, and lemon juice. Mix in dry ingredients.
  4. Cream Cheese Filling: Beat cream cheese, sugar, and vanilla.
  5. Assemble: Fill muffin liners with batter, add cream cheese filling, cover with more batter, and top with streusel.
  6. Bake: Reduce oven to 350°F. Bake for 22-25 minutes. Cool and glaze.
