Ingredients

  • 1 large zucchini
  • ¼ c olive oil
  • ½ c marinara sauce
  • ½ c mozzarella cheese
  • ¼ c Parmesan cheese
  • Salt and pepper

Instructions
 

  1. Preheat oven to 425°F. And line a baking tray with parchment paper or foil.
  2. Slice zucchini into ¼-inch rounds. Place on the tray, brush with olive oil, and season with salt and pepper. Bake for 2 minutes.
  3. Flip zucchini rounds. Brush with more olive oil and season. And bake for another 1-2 minutes.
  4. Remove from oven. Top each round with marinara sauce, mozzarella, and Parmesan.
  5. Broil for 1-2 minutes until cheese is bubbly. And slightly browned. Let cool before serving.
