2 Servings

Ingredients

  • 2 large eggs
  • 4 cups bone broth or chicken broth
  • 1-2 pinches crushed red pepper flakes optional
  • 1-2 pinches ground white pepper to taste
  • 2 tbsp sliced scallions
  • Salt to taste

Instructions

Prepare the Eggs:

  1. In a small bowl, whisk the eggs until smooth. Add a touch of freshly ground black pepper, if desired, for additional flavor. Set aside.

Heat the Broth:

  1. Pour the bone broth into a small saucepan and place over high heat. Add the crushed red pepper flakes and white pepper. Bring the broth to a rolling boil, stirring occasionally.

Incorporate the Eggs:

  1. Once the broth is boiling, reduce the heat slightly and slowly drizzle the whisked eggs into the broth while gently stirring in a circular motion. The heat will instantly cook the eggs, forming delicate ribbons.

Season the Soup:

  1. Remove the saucepan from heat and taste the soup. Add salt as needed, keeping in mind that bone broth may require more salt than standard chicken broth.

Garnish and Serve:

  1. Divide the soup evenly between serving bowls. Garnish each bowl with sliced scallions and serve immediately. Enjoy the warm and comforting flavors of this keto-friendly dish.
