Ingredients

  • 5 slices bacon
  • 2 pounds ground beef
  • ½ cup onion chopped
  • 1 tablespoon garlic minced
  • 1 can 15 ounces diced tomatoes, drained
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 32 ounces beef broth
  • 3 tablespoons tomato paste
  • 2 teaspoons mustard
  • 8 ounces cream cheese
  • 1 cup cheddar cheese shredded

Instructions

Cook the Bacon:

  1. In a large saucepan or Dutch oven, cook the bacon over medium heat until it becomes crisp. Remove the bacon and place it on a plate lined with paper towels. Retain one tablespoon of the bacon grease in the pot.

Brown the Ground Beef:

  1. Add the ground beef, chopped onion, and minced garlic to the same pot. Cook until the beef is browned and the onion becomes tender. Drain excess grease and return the mixture to the pot.

Build the Soup Base:

  1. Stir in the tomato paste, mustard, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper. Mix well to coat the beef evenly.

Add Liquid Ingredients:

  1. Pour in the beef broth and drained diced tomatoes. Stir to combine. Bring the soup to a gentle simmer and allow it to cook uncovered for 10 minutes, allowing the flavors to meld.

Incorporate the Cheese:

  1. Reduce the heat to low. Gradually add the cream cheese and shredded cheddar cheese, stirring continuously until fully melted and the soup achieves a smooth and creamy consistency.

Add Bacon:

  1. Crumble the cooked bacon and stir it into the soup. Allow the soup to simmer for an additional 2–3 minutes to enhance the flavor.

Serve:

  1. Ladle the soup into bowls and garnish with additional shredded cheese or crumbled bacon if desired. Serve warm and enjoy.
