This Jamaican cabbage recipe is a flavorful and vibrant side dish made with cabbage, carrots, bell peppers, onions, and Scotch bonnet pepper for a touch of heat. Perfectly seasoned with fresh thyme and a tangy vinegar finish, it pairs beautifully with jerk chicken or rice and peas.
6 Servings

Ingredients

  • 1 head green cabbage shredded
  • 2 tablespoons olive oil
  • 1 small onion thinly sliced
  • ½ green bell pepper chopped
  • 1 green onion sliced
  • 1 whole Scotch bonnet pepper left whole for mild heat, chopped for spicier flavor
  • 2 sprigs fresh thyme
  • 1 teaspoon salt optional
  • 1 cup shredded carrots
  • ¼ cup white vinegar
  • 2 tablespoons white sugar

Instructions

Prepare the Vegetables:

  1. Remove the tough outer leaves from the cabbage and discard. Cut the cabbage in half, remove the core, and shred it into thin strips. Slice the onion, green bell pepper, and green onion. Set all vegetables aside.

Sauté the Aromatics:

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the sliced onion, bell pepper, and green onion. Sauté for approximately 5 minutes, stirring occasionally, until the vegetables soften and become fragrant.

Add the Seasonings:

  1. Introduce the Scotch bonnet pepper, fresh thyme sprigs, and salt (if using) into the pan. Stir to evenly distribute the seasonings, allowing the flavors to infuse into the vegetables.

Incorporate the Cabbage and Carrots:

  1. Add the shredded cabbage and carrots to the skillet, mixing well to combine them with the sautéed vegetables. Reduce the heat to medium-low, cover the pan, and allow the cabbage to steam for 10 minutes, stirring occasionally.

Enhance the Flavor:

  1. Pour the white vinegar and sprinkle the sugar over the cabbage mixture. Stir to incorporate these final ingredients, ensuring an even distribution. Continue cooking uncovered for an additional 3–5 minutes, until the cabbage is tender yet retains a slight crunch.

Final Touch and Serving:

  1. Remove the thyme sprigs and the Scotch bonnet pepper before serving. Transfer to a serving dish and enjoy warm as a side to your favorite Jamaican or Caribbean dishes.
