Ingredients

  • 16 oz. Italian sausage
  • 1/2 of a medium onion finely chopped
  • 3 to 4 garlic cloves finely minced
  • 1/2 tsp. crushed red pepper flakes adjust to taste, optional
  • 1 c orzo pasta uncooked
  • 2 c of chicken broth
  • 1 c of heavy cream
  • 1/2 c parmesan cheese freshly grated
  • 2 c fresh baby spinach tightly packed
  • Salt and freshly ground black pepper adjusted to your preference

Instructions
 

  1. Start by adding the sausage to a large soup pot or Dutch oven and cook over medium-high heat for about 5 minutes.
  2. Next, mix in the chopped onions, and continue cooking for another 5 minutes Or until the sausage is browned, and the onions are tender.
  3. Add the minced garlic, crushed red pepper flakes, and orzo, Stirring for about 30 seconds.
  4. Pour in the chicken broth and cream, bringing the mixture to a gentle bubble. Continue cooking for 10 minutes, stirring frequently to prevent the orzo from sticking to the pot. You may need to reduce the heat to medium or medium-low to maintain a gentle simmer without reducing the liquid too quickly.
  5. Once the pasta is cooked, remove the pot from the heat. Stir in the grated parmesan and fresh spinach, then cover the pot for 3–5 minutes to let the mixture thicken to your desired consistency. Adjust the seasoning with salt and pepper before serving.
