Ingredients

  • 3 tablespoons unsalted butter
  • 10 ounces marshmallows
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 6 cups Rice Krispies®
  • 1/4 cup finely grated carrots
  • 8 ounces cream cheese room temperature
  • 4 tablespoons unsalted butter room temperature
  • 2 cups powdered sugar not packed
  • 2 teaspoons vanilla extract

Instructions
 

  1. Grease a 9x13-inch baking pan with cooking spray.
  2. In a saucepan. Melt 3 tablespoons of butter over medium heat. Add marshmallows. And stir until they are completely melted.
  3. Combine. Nutmeg into the mixture.
  4. Take the pan off the heat. Stir in Rice Krispies® until they are well coated, with the marshmallow mix. Then add in the carrots.
  5. Pour the mixture into the greased pan. Press down gently to level it out. Let it cool down completely.
  6. In a mixing bowl. Cream together room-temperature cream, and 4 tablespoons of butter. Gradually add sugar and vanilla extract. Beating until smooth.
  7. Once the base has cooled. Spread the cream cheese frosting evenly over it. Cut into squares. Serve up some brownie muffins!

Notes
