Ingredients

Main Ingredients:

  • 3 pounds flank steak thinly sliced against the grain
  • 2 cups fresh snow peas
  • 1 yellow onion thinly sliced
  • ½ cup red bell pepper finely diced
  • 4 cups broccoli chopped and steamed

Sauce:

  • ½ cup soy sauce
  • 2 teaspoons minced garlic
  • 2 tablespoons sesame oil
  • 1 cup beef broth
  • cup light brown sugar
  • 3 tablespoons cornstarch

Instructions

Prepare the Sauce

  1. In a mixing bowl, combine the soy sauce, garlic, sesame oil, beef broth, and brown sugar. Whisk until well blended. Reserve the cornstarch for later use.

Assemble in the Instant Pot

  1. Place the thinly sliced flank steak into the Instant Pot. Pour the prepared sauce mixture over the beef, ensuring the meat is evenly coated.

Pressure Cook

  1. Secure the lid and close the sealing valve. Cook on the manual (high pressure) setting for 10 minutes.

Natural Release

  1. Allow the Instant Pot to perform a natural pressure release for 10 minutes. Afterward, carefully execute a quick release for any remaining pressure. Remove the beef from the pot and set aside.

Thicken the Sauce

  1. Switch the Instant Pot to the “Sauté” function. Gradually add the cornstarch while stirring continuously until the sauce reaches a thick, glossy consistency.

Finish and Serve

  1. Return the cooked beef to the pot and stir to coat with the sauce. Gently fold in the steamed broccoli, snow peas, onion, and red pepper. Serve immediately over rice or noodles.

Notes

To make this dish gluten-free, substitute tamari or a certified gluten-free soy sauce for the regular soy sauce. Ensure the beef broth and cornstarch are certified gluten-free as well.
