Ingredients

For the Soup:

  • 3 to 4 c rotisserie chicken shredded (or 2 large chicken breasts, cooked and shredded)
  • 8 c water
  • 4 tbsp Better than Bouillon Chicken
  • 4 tbsp salted butter
  • 4 carrots cut in half lengthwise and then diced
  • 4 celery stalks diced
  • 2 small yellow onions finely diced
  • 1/2 c flour
  • 1 c milk
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Dumplings:

  • 2 c Bisquick
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2/3 c milk

Instructions
 

  1. Prepare chicken broth. By combining water with Better than Bouillon. And microwaving for 3 minutes. Set aside.
  2. In a large pot. Melt butter over medium heat. And sauté carrots, celery, and onions until soft. About 10 minutes.
  3. Stir in flour, cook for 1 minute. Then add the broth. And bring to a boil.
  4. Add shredded chicken, seasonings, and milk. Simmer on low. While you prepare the dumplings.
  5. In a bowl, mix Bisquick with seasonings. Add milk and stir. Until just combined.
  6. Drop spoonfuls of dumpling batter. Into the simmering soup. Cover and cook for 15 minutes. Then flip the dumplings. And cook for another 2-3 minutes uncovered.
  7. Serve hot. Garnished with parsley if desired.

Notes
