Ingredients

  • 3/4 c olive oil
  • 1/2 c white wine vinegar
  • 8 oz roasted red peppers drained and chopped
  • 3 green onions diced
  • 3 cloves garlic minced
  • 1 tsp sugar
  • 3/4 tsp dried oregano
  • 1/2 tsp sea salt
  • 1 tsp black pepper
  • 2 8 ounces packages cream cheese, chilled
  • 2 8 ounces blocks mozzarella
  • 1 8 ounces block cheddar cheese

Instructions
 

  1. Place the cream cheese in the freezer for a few minutes while you prep the other elements; this will make it more manageable to slice into clean portions.
  2. In a small mixing bowl, whisk together the olive oil, vinegar, chopped roasted red peppers, green onions, garlic, sugar, oregano, salt, and pepper until the blend is velvety and well-merged.
  3. Slice both the cheddar and mozzarella into uniform 1/4-inch squares. Take the cream cheese out of the freezer and slice it into similar-sized squares.
  4. In an 11x7-inch dish, arrange the cheese slices, alternating between the cheddar, mozzarella, and cream cheese, creating a colorful, layered presentation.
  5. Give the marinade another quick stir and drizzle it evenly over the layers of cheese, making sure every piece is coated.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least 5 hours or overnight. To allow the savors to meld together.
