Ingredients

  • 3 small or 2 large sweet potatoes peeled and diced (about 3 c.)
  • 1 lb. ground turkey
  • 1 yellow bell pepper
  • 1 c. onion diced
  • ½ c. mozzarella shredded
  • ½ c. water
  • ¼ c. cilantro chopped
  • 2 tbsp. olive oil
  • 1.5 tbsp. ground cumin
  • 1 tbsp. garlic minced
  • 1 tsp. chili powder
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions
 

  1. Start by heating 2 tablespoons of olive oil in a skillet, over high heat. Then add 1 tablespoon of garlic. Cook it for about 1 minute.
  2. Next, incorporate 1 pound of ground turkey into the skillet. Use a spoon to break it apart while cooking. Keep stirring until the turkey is nicely browned, for 8 minutes.
  3. Now it's time to add some flavors! Sprinkle in 1.5 tablespoons of ground cumin, 1 teaspoon of chili powder, half a teaspoon of salt and a quarter teaspoon of pepper. Give everything a stir to ensure the spices are well distributed.
  4. To continue building the dish introduce 1 cup of onion and one yellow bell pepper into the skillet. Cook them for around 3 to 4 minutes until they become soft and tender.
  5. Incorporate 3 cups of potatoes and half a cup of water into the mixture. Stir everything together, cover the skillet with a lid and let it simmer for 6 to 8 minutes until the sweet potatoes are nice and tender. If needed you can add water during this process.
  6. Once cooked to your liking, taste and adjust the seasoning by adding salt or pepper if desired. Finish off by sprinkling half a cup of mozzarella cheese on top. Allow it to melt beautifully before garnishing it with a quarter cup of chopped cilantro.
  7. Finally, your delicious dish is ready to be enjoyed!
