Ingredients

  • 2 pounds lean ground beef
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cornstarch
  • 1/2 c water
  • Salt and pepper to taste
  • 2 c sour cream
  • 2 cans condensed cream of chicken soup 10.75 oz
  • 2 cans chopped green chilies 4 oz
  • 2 c shredded Monterey jack cheese
  • 12 large flour tortillas

Optional Garnishes:

  • Shredded lettuce
  • Diced tomatoes
  • Chopped onion
  • Extra sour cream

Instructions
 

Preheat the Oven:

  1. Set your oven to 350°F (175°C) so it’s ready when you need it.

Cook the Beef:

  1. In a large skillet over medium heat, add the ground beef and cook until it’s browned and cooked through. While it’s cooking, grab a small bowl and mix together the chili powder, garlic powder, onion powder, oregano, paprika, cumin, salt, pepper, and cornstarch.

Season the Beef:

  1. Once the beef is fully browned, sprinkle the seasoning mixture over it. Stir everything well to coat the beef with all those flavors. Then, pour in the water and let it simmer for about 10 minutes, or until most of the liquid has cooked off.

Make the Cheese Mixture:

  1. In a medium bowl, combine the sour cream, cream of chicken soup, chopped green chilies, and shredded cheese. This creamy mixture is what makes these burritos extra delicious!

Fill the Tortillas:

  1. Add about half of the cheese mixture to the ground beef and stir well. Now, take your tortillas, spoon some of the meat mixture into each, and roll them up snugly. Place each burrito seam-side down in a 9 x 13-inch baking dish.

Top with More Cheese Mixture:

  1. Pour the remaining cheese mixture over the rolled-up burritos, spreading it evenly on top.

Bake:

  1. Place the baking dish in the oven and bake for 20 to 30 minutes, until everything is hot and bubbly.

Cool and Serve:

  1. Let the burritos cool for about 5 minutes before serving. Add your favorite toppings like shredded lettuce, diced tomatoes, or a dollop of sour cream, and enjoy!

Notes

If you need to make these burritos gluten-free, it’s super easy! Just swap out the regular flour tortillas for gluten-free tortillas—most stores carry them these days, and they hold up just as well. Also, check the labels on your cream of chicken soup, as some brands sneak gluten in there. There are plenty of gluten-free options, or you could make a quick homemade version with broth and a bit of cornstarch for thickening. With these swaps, everyone at the table can enjoy this cozy dish without a second thought.
