Ingredients

  • 15.25 oz. white cake mix 432 grams
  • 8 tbsp unsalted butter softened
  • 2 large eggs room temperature
  • 2 tsp peppermint extract or mint extract
  • ½ tsp vanilla extract
  • Green gel food coloring
  • ¼ c powdered sugar 32 grams
  • 3 tbsp cornstarch
  • Red heart-shaped sprinkle or cinnamon for decoration

Instructions
 

  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl combine the white cake mix weighing 15.25 oz. softened butter (8 tbsp) and 2 large eggs. Mix thoroughly until blended.
  3. Add 2 tsp of peppermint or mint extract and ½ tsp of vanilla extract, to the mixture. Adjust the color by adding gel food coloring until you achieve your desired shade.
  4. In a bowl mix together sugar (¼ cup or 32 grams) and cornstarch (3 tbsp).
  5. Using a cookie scoop that measures 1 ½ tbsp, scoop out portions of dough. Roll each portion in the sugar mixture to coat it evenly. Place the coated dough balls on the baking sheet leaving about an inch of space between them.
  6. Bake for 10 to 12 minutes until the edges are set and the tops appear dry.
  7. Soon as they come out of the oven gently press a heart-shaped sprinkle onto each cookie.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack, for cooling.
