Ingredients

  • 2 pounds boneless skinless chicken breasts, cut into chunks
  • 1 cup barbecue sauce divided
  • 1 large onion thinly sliced
  • 2 bell peppers red, green, or a mix, diced
  • 12 ounces pineapple chunks fresh or thawed from frozen
  • 1 jalapeño deseeded and finely diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  1. Preheat your oven to 400°F. And lightly grease a baking dish. With cooking spray. Then set it aside.
  2. Slice the onion thinly. Dice the bell peppers. Into bite-sized pieces. And seed. And chop the jalapeño. Set the vegetables aside.
  3. In a bowl. Combine the chicken pieces. With 2/3 cup of barbecue sauce. Ensuring they are evenly coated. Let the chicken marinate. For about 15 minutes.
  4. Layer the sliced onion. At the bottom of the baking dish. Then place the marinated chicken on top. Followed by the diced bell peppers. And pineapple chunks. Drizzle the remaining barbecue sauce. Over everything. Toss lightly. And sprinkle the chopped jalapeño on top. Season with salt. And pepper to taste.
  5. Bake the dish uncovered. For 30-35 minutes. Or until the chicken. Reaches an internal temperature of 165°F.
  6. Once done. Spoon the sauce. And juices. Over the chicken. Before serving.
