Garlic Parmesan Zucchini Casserole

This Garlic Parmesan Zucchini Casserole is a rich, cheesy, and flavorful dish featuring fresh zucchini, Parmesan, mozzarella, and a crispy breadcrumb topping. It is an easy, satisfying side dish that pairs beautifully with any meal.

  • 4 cups grated zucchini approximately 3.5 medium zucchinis
  • ½ teaspoon salt
  • ½ cup finely diced onion
  • 1 tablespoon minced garlic
  • 2 large eggs
  • ½ cup grated Parmesan cheese plus an additional 2 tablespoons for topping
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup Panko breadcrumbs
  • 2 tablespoons melted butter

Prepare the Zucchini

  1. Begin by placing the grated zucchini in a colander. Sprinkle it with ½ teaspoon salt and allow it to sit for 10 minutes to draw out excess moisture. Afterward, use a clean kitchen towel to squeeze out as much liquid as possible. This step is essential to prevent a watery casserole.

Preheat the Oven

  1. Preheat the oven to 375°F (190°C) and lightly grease a small baking dish with cooking spray to prevent sticking.

Mix the Ingredients

  1. In the prepared baking dish, combine the drained zucchini, diced onion, minced garlic, eggs, ½ cup Parmesan cheese, mozzarella cheese, and cheddar cheese. Mix until well combined, then spread the mixture evenly into the dish.

Bake the Casserole

  1. Place the dish in the preheated oven and bake uncovered for 20 minutes to allow the cheese to melt and the zucchini to soften.

Prepare the Topping

  1. While the casserole bakes, prepare the topping by combining Panko breadcrumbs, melted butter, and the remaining 2 tablespoons of Parmesan cheese in a small bowl. Stir until evenly coated.

Add the Topping & Continue Baking

  1. After 20 minutes, remove the casserole from the oven. Evenly sprinkle the prepared breadcrumb mixture over the top. Return the dish to the oven and bake for an additional 5 to 10 minutes until the topping becomes golden brown and crisp.

Rest & Serve

  1. Allow the casserole to rest for a few minutes before serving. This allows the flavors to meld and the texture to set properly. Serve warm as a flavorful side dish alongside your favorite main course.

Notes

To make this dish gluten-free, simply substitute Panko breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers. Ensure all other ingredients, such as cheese and seasonings, are labeled gluten-free to avoid cross-contamination.
