  • 2 lbs carrots peeled, scrubbed, and chopped into 3-inch pieces
  • 4 tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1/3 cup Parmesan cheese grated
  • 2 tbsp fresh parsley minced
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Prepare the oven and pan

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and set aside.

Create the seasoning mixture
