Garlic Mushroom Chicken Bites

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • Salt and freshly ground black pepper to taste
  • 12 ounces fresh mushrooms thickly sliced
  • 4 tablespoons unsalted butter divided
  • 1 teaspoon Italian seasoning
  • 1 tablespoon minced garlic
  • 2 teaspoons freshly squeezed lemon juice
  • 1 tablespoon chopped fresh parsley

Prepare the chicken:

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces generously with salt and black pepper.

Sear the chicken:

  1. Arrange the chicken in a single layer in the skillet, working in batches if necessary to avoid overcrowding. Cook each batch for approximately 3 to 4 minutes per side, or until the chicken is golden brown and cooked through. Transfer the cooked chicken to a plate and cover to keep warm.

Cook the mushrooms:

  1. In the same skillet, add 1 tablespoon of the butter. Once melted, add the sliced mushrooms and a light seasoning of salt and pepper. Sauté for 4 to 5 minutes, or until the mushrooms are browned and tender.

Combine ingredients:

  1. Return the seared chicken to the skillet with the mushrooms. Add the remaining 3 tablespoons of butter along with the Italian seasoning. Stir gently until the butter is fully melted and everything is well coated.

Add garlic and finish:

  1. Stir in the minced garlic and cook for 1 minute, ensuring it does not burn. Add the lemon juice and sprinkle the chopped parsley over the top. Stir once more to incorporate, then remove from heat and serve immediately.
