Ingredients

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • 1 ½ teaspoons vanilla extract
  • ¼ cup sprinkles
  • Cooking spray as needed

For the Sprinkle Sauce:

  • 1 cup confectioners' sugar
  • cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • teaspoon sea salt
  • 2 tablespoons sprinkles

Instructions
 

Prepare the Pancake Batter:

  1. In a large mixing bowl, whisk together the flour, white sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth and uniform in consistency.
  3. Gradually pour the wet mixture into the dry ingredients. Stir until just combined, taking care not to overmix. Gently fold in the sprinkles. Allow the batter to rest for approximately 5 minutes.

Prepare the Sprinkle Sauce:

  1. In a small bowl, whisk together the confectioners' sugar, heavy cream, vanilla extract, and sea salt until smooth and glossy. Gently stir in the sprinkles. Set aside for serving.

Cook the Pancakes:

  1. Preheat a large non-stick skillet over medium-low heat and coat it lightly with cooking spray. Pour approximately ½ cup of batter onto the skillet and spread into a circle about ¼-inch thick.
  2. Cook until bubbles form on the surface and the edges begin to dry, about 2 to 3 minutes. Flip the pancake carefully and continue cooking for an additional 1 to 2 minutes, or until the second side is set and lightly golden.
  3. Transfer to a serving plate and repeat with the remaining batter, spraying the skillet as needed between batches.

Serve:

  1. Stir the prepared sprinkle sauce to ensure sprinkles are evenly distributed. Drizzle generously over the warm pancakes and serve immediately.

Notes

To make this recipe gluten-free, substitute the all-purpose flour with a high-quality gluten-free all-purpose flour blend that includes xanthan gum or a binder.
