French Onion Flavored Chicken features tender chicken breasts simmered with caramelized onions, savory beef broth, and melted provolone cheese for a rich and comforting meal ready in just 30 minutes.

Ingredients

For the Onions:

  • 1 tablespoon unsalted butter
  • 2 medium yellow onions thinly sliced
  • 3 to 4 tablespoons low-sodium fat-free beef broth

For the Chicken and Sauce:

  • 4 boneless skinless chicken breasts
  • 2 ½ teaspoons olive oil
  • 1 cup low-sodium fat-free beef broth
  • 3 tablespoons fresh chives chopped
  • Salt and freshly ground black pepper to taste
  • 4 slices thinly sliced provolone cheese
  • 2 tablespoons cornstarch for thickening

Instructions
 

Caramelize the Onions:

  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté briefly. Pour in 3 to 4 tablespoons of beef broth, reduce the heat, and cook for approximately 30 minutes, stirring occasionally, until the onions are golden brown and caramelized. Transfer the onions to a bowl and set aside.

Cook the Chicken:

  1. Season the chicken breasts on both sides with salt and pepper. Add olive oil to the skillet and heat over medium. Cook the chicken breasts for 5–7 minutes per side until golden brown and fully cooked through. Transfer the chicken to a plate.

Prepare the Sauce:

  1. Return the caramelized onions to the skillet. Add cornstarch and 1 cup of beef broth, whisking constantly until the sauce thickens, about 1 minute.

Combine Chicken and Sauce:

  1. Place the cooked chicken breasts back into the skillet. Spoon the sauce over the chicken and allow to simmer for 3 minutes.

Add the Cheese:

  1. Lay one slice of provolone cheese on each chicken breast. Cover the skillet with a lid and cook briefly until the cheese melts.

Serve:

  1. Remove from heat. Garnish with fresh chives or cracked black pepper before serving.

Notes

To make French Onion Flavored Chicken gluten-free, replace the cornstarch with arrowroot powder or a certified gluten-free thickener. Additionally, confirm that the beef broth and provolone cheese are certified gluten-free to avoid cross-contamination.
