Ingredients

  • 1 ½ c all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ c mashed ripe banana about 2 small bananas
  • 2 tbsp melted unsalted butter plus more for greasing griddle
  • 1 large egg
  • ¾ c buttermilk
  • ¼ c packed brown sugar preferably dark brown
  • 1 tsp pure vanilla extract
  • To serve: butter maple syrup, sliced banana, walnuts, and/or chocolate chips

Instructions
 

  1. In a large bowl, mix the flour, baking powder, and salt together.
  2. In another bowl, whisk together the mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla. Until smooth.
  3. Pour the wet mixture. Into the dry ingredients. And stir gently with a spatula. Be careful not to overmix. A few lumps are okay.
  4. Heat a griddle or large skillet. Over medium-low heat. And grease with a bit of butter.
  5. Drop the batter onto the griddle in ⅓ c portions. Spreading it slightly to form circles. Cook until bubbles form around the edges. Then flip. And cook until golden brown.
  6. Serve hot with butter, and syrup. And your favorite toppings. Enjoy!

Notes

To make these pancakes gluten-free. Simply swap out the all-purpose flour. For a good quality gluten-free flour blend. Make sure the blend includes xanthan gum. Or another binding agent. To help replicate the texture of regular flour. The rest of the ingredients are naturally gluten-free. So you won’t have to make any other changes. Just be sure to check that your baking powder is gluten-free. As some brands may contain traces of gluten. With this easy swap. You can enjoy all the deliciousness of these fluffy pancakes. Without any gluten!
