Ingredients

  • 2 c all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tbsp salt
  • 1 ½ c white sugar
  • 3 large eggs
  • ¾ c buttermilk
  • ¾ c vegetable oil
  • 2 tbsp vanilla extract
  • 2 c shredded carrots
  • 1 8 oz can crushed pineapple with juice
  • 1 c flaked coconut
  • 1 c chopped walnuts
  • 1 c raisins

Instructions
 

  1. Preheat the Oven: Set your oven to 350 degrees F (175 degrees C). Grease. And flour in an 8x12-inch baking pan.
  2. Mix Dry Ingredients: In a medium bowl. Sift together the flour, baking soda, cinnamon, and salt.
  3. Combine Wet Ingredients: In a large bowl. Whisk the sugar, eggs, buttermilk, oil, and vanilla extract together.
  4. Add Dry to Wet: Gradually mix the dry ingredients. Into the wet mixture. Until just combined.
  5. Prepare Carrot Mixture: In another bowl. Combine the shredded carrots, crushed pineapple (with juice), coconut, walnuts, and raisins.
  6. Combine Mixtures: Stir the carrot mixture into the batter. Using a large wooden spoon. Until everything is well incorporated.
  7. Bake: Pour the batter. Into the prepared pan. Bake for about 1 hour. Or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Let the cake cool in the pan. For at least 20 minutes before serving.
