Easy Spiced Applesauce Muffins Recipe

Ingredients

Muffins:

  • 1 1/2 c all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon freshly grated nutmeg
  • 2 large eggs
  • 1/2 teaspoon pure vanilla extract
  • 1 c light brown sugar
  • 1/2 c 1 stick + 3 tablespoons unsalted butter, melted
  • 1 c unsweetened applesauce
  • 1/2 c chopped walnuts or pecans

Topping:

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions
 

  1. Preheat your oven to 400°F. Line a muffin pan with 12 paper liners.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg. Set aside.
  3. In a mixer bowl. Whisk eggs and brown sugar until smooth. Slowly add melted butter. Mix until combined.
  4. Add vanilla extract and applesauce. Then gradually mix in the dry ingredients.
  5. Fold in the chopped nuts.
  6. Divide the batter evenly among the muffin cups. Filling each about 3/4 full.
  7. Mix granulated sugar and cinnamon in a small bowl. Then sprinkle over the muffin tops.
  8. Bake for 18-20 minutes. Or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool for a few minutes. Before transferring to a wire rack. To cool completely.
