Ingredients

  • 6 large sweet potatoes
  • ½ c butter
  • 2 c white sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • Salt to taste
  • 1 tbsp vanilla extract

Instructions
 

  1. Assemble all the ingredients.
  2. Peel the sweet potatoes. And slice them. Into 1/4-inch rounds.
  3. In a large skillet. Over medium heat. Melt the butter. Add the sweet potatoes.
  4. In a separate bowl. Combine the sugar, cinnamon, nutmeg. And a pinch of salt. Sprinkle this mixture. Over the sweet potatoes. Stirring to ensure everything. Is well coated.
  5. Lower the heat. Cover the skillet. And cook. Stirring occasionally. For about 1 hour. Until the sweet potatoes. Become tender. And "candied." The sauce will thicken. And darken. As it cooks.
  6. Just before serving. Stir in the vanilla. Serve while hot.
