This Easy Sloppy Joe Pasta Bake. Combines two comfort food favorites. Into one delicious dish. Using leftover Sloppy Joe's mix. This recipe is perfect for a quick weeknight meal. That feels both hearty. And satisfying. The pasta bakes in a savory tomato sauce. And the melted cheese on top. Adds a perfect finishing touch. It’s a dish. That’s not only tasty. But also practical. Transforming leftovers. Into a meal your whole family will love. My husband and child. Couldn’t get enough of it the first time I made it. And now it’s a regular. In our dinner rotation.

Ingredients

  • approx. 3.5 c of leftover Sloppy Joes mix
  • 1 c 240ml of passata
  • 300 grams 10.5 ounces of uncooked pasta (I used penne)
  • salt and black pepper
  • 50 grams 2 ounces of mozzarella
  • 30 grams 1 ounces of cheddar

Instructions
 

  1. Preheat your oven to 200°C/400°F (gas mark 6).
  2. Cook the pasta in boiling water until al dente, then drain.
  3. Mix the pasta with the leftover Sloppy Joe mix and place it in an ovenproof dish.
  4. Spoon the passata over the top, then season with salt and pepper.
  5. Sprinkle the grated mozzarella and cheddar on top.
  6. Bake for about 30 minutes, or until the cheese is melted and golden.
  7. Let it sit for 5-10 minutes before serving. Enjoy with a side salad or your favorite veggies!
