Easy Shrimp Fried Rice

Easy Shrimp Fried Rice combines tender shrimp, garlic, peas, carrots, leftover rice, soy sauce, and sesame oil for a quick and flavorful weeknight meal ready in just 20 minutes.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 garlic cloves finely minced
  • 1 cup frozen peas and carrots or vegetables of choice
  • 1 pound shrimp peeled and deveined, fresh or frozen
  • 3 cups cooked white rice brown rice may be substituted, preferably leftover
  • 2 ½ teaspoons sesame oil
  • 2 tablespoons soy sauce
  • 2 small eggs whisked well
  • Green onions chopped (optional, for garnish)

Instructions
 

Heat the Oil and Garlic:

  1. Warm the vegetable oil in a medium-sized skillet over medium heat. Add the minced garlic and cook, stirring frequently, for 1 minute until fragrant.

Cook the Vegetables and Shrimp:

  1. Add the peas and carrots to the skillet. Sauté for 3 minutes, then add the shrimp. Continue cooking for approximately 4 minutes, or until the shrimp are pink and opaque.

Incorporate the Rice and Seasonings:

  1. Stir in the cooked rice. Add the sesame oil and soy sauce, tossing well to combine. Sauté for 2 minutes, ensuring the rice is evenly coated with the seasonings. Push the rice mixture to one side of the skillet.

Prepare the Eggs:

  1. Pour the whisked eggs into the empty side of the skillet. Cook while stirring continuously until the eggs are scrambled and fully set.

Combine and Serve:

  1. Fold the scrambled eggs into the rice and shrimp mixture. Garnish with chopped green onions if desired. Serve hot.

Notes

To make Easy Shrimp Fried Rice gluten-free, substitute tamari or certified gluten-free soy sauce in place of regular soy sauce. Confirm that sesame oil and all other seasonings are gluten-free to prevent cross-contamination.
