  • 1 ¼ lb chopped zucchini 2 medium
  • 1 tbsp butter
  • 1 tbsp minced garlic 3 cloves
  • 1 scallion thinly sliced, optional
  • 1 to 2 tsps fresh lemon juice optional
  • 1/4 c fresh grated Parmesan cheese optional
  • Salt and fresh ground black pepper

Instructions

  2. Add zucchini and garlic, cooking for 3 to 5 minutes. Until the zucchini is browned and tender. Stirring occasionally.
