Easy Peanut Butter Chocolate Chip Banana Bread

Ingredients

  • 2 to 3 very ripe bananas
  • 1/3 cup 74 g melted unsalted butter
  • 1/2 cup milk whole, 2%, or any preferred nut milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup 200 g granulated sugar
  • 1/2 cup 113 g creamy peanut butter
  • 1/2 teaspoon baking soda
  • Pinch of kosher salt
  • 1/2 teaspoon ground cinnamon optional
  • 1 1/2 cups 191 g all-purpose flour
  • 3/4 cup 143 g chocolate chips

Instructions
 

Prepare the oven and loaf pan:

  1. Preheat the oven to 350°F (177°C). Grease or spray a 4 1/2 x 8 1/2-inch loaf pan thoroughly to ensure easy removal after baking.

Prepare the batter:

  1. Place the bananas in a mixing bowl and mash them until smooth. Add the melted butter, milk, egg, and vanilla extract, and whisk until fully combined. Stir in the granulated sugar until incorporated.
  2. In a separate bowl, beat the peanut butter with a hand mixer or whisk until smooth. Add it to the banana mixture and blend until uniform. Scrape down the sides of the bowl and add the baking soda, salt, and optional cinnamon, mixing until evenly distributed.

Add the dry ingredients and chocolate chips:

  1. Using a spatula, fold the all-purpose flour into the batter until no streaks remain. Fold in the chocolate chips until evenly dispersed.

Bake the loaf:

  1. Transfer the batter into the prepared loaf pan and smooth the top. Bake on the center oven rack for 55 to 60 minutes, or until the loaf is deeply golden and a toothpick inserted in the center comes out clean.

Cool the bread:

  1. Remove the loaf from the oven and allow it to cool completely on a wire rack before removing it from the pan and slicing.

Notes

To make this recipe gluten-free, substitute the all-purpose flour with a high-quality 1:1 gluten-free baking flour that contains xanthan gum. Ensure that the baking soda, chocolate chips, and peanut butter are certified gluten-free. Baking time may vary slightly, so begin checking for doneness at the 50-minute mark.
