These Easy Cheesy Mashed Potato Puffs. Are a delightful blend of fluffy mashed potatoes, gooey Monterey Jack cheese, and fresh chives. Baked to perfection. In mini muffin tins. Ingredients

  • 3 eggs beaten
  • 2 c mashed potatoes at room temperature
  • 1 c shredded Monterey Jack cheese divided
  • 1/4 c finely chopped fresh chives plus more for garnish
  • Salt and pepper to taste
  • Sour cream for serving optional
