Ingredients

  • 1 head of green cabbage outer leaves discarded, trimmed, and sliced into thick 1-inch "steaks"
  • 2 tbsp olive oil
  • 2 garlic cloves finely minced
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 c freshly grated Parmesan cheese
  • 1 c grated mozzarella cheese
  • Kosher salt and freshly cracked black pepper to taste

Instructions
 

  1. First, go forward and preheat your oven to 425°F.
  2. In a small bowl, mix together the olive oil, minced garlic, onion powder, thyme, 2 tablespoons of Parmesan, and a good pinch of salt and pepper. This mixture will be your magic flavor booster.
  3. Lay the cabbage steaks out on a baking sheet, making sure they’re in a single layer. Brush each one generously with the olive oil blend, getting every nook and cranny.
  4. Pop them into the oven and roast for about 20 minutes, or until the edges are tender and golden brown. Pull them out, sprinkle on the mozzarella and the rest of the Parmesan, and pop them back in for another 5 minutes, just until the cheese is bubbly and beautifully golden. Enjoy!
