  • 1 ⅓ c buttermilk
  • 1 large egg well beaten
  • 4 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Instructions

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
  4. Combine: Pour the wet ingredients into the dry ingredients. Stir until just combined. Let the batter sit for 5 minutes.
  5. Cook Pancakes: Heat a non-stick skillet over medium heat. Lightly spray with cooking spray. Spoon about 3 tbsp of batter into the skillet. And spread it out gently.
  6. Flip and Finish: Cook for 2-3 minutes until bubbles form on top. And the bottom is golden. Flip and cook for another 2-3 minutes. Until golden brown.
  7. Assemble: Place a sausage on each pancake. As soon as it comes off the skillet. And roll the pancake around the sausage. Set it seam side down to keep it rolled.
