Ingredients

Egg Roll Ingredients:

  • 1 pound ground beef
  • ½ c diced onions
  • 2 tablespoons yellow mustard
  • 2 tablespoons ketchup
  • ½ tsp salt
  • ¼ tsp pepper
  • 12 egg roll wrappers
  • 1 c shredded cheddar cheese
  • ¾ c chopped dill pickles

Sauce Ingredients:

  • ½ c mayonnaise
  • 3 tbsp minced pickles
  • 1 tbsp sugar
  • 1 tbsp mustard
  • 2 tbsp ketchup
  • ½ tsp paprika

Instructions

  1. Start by gathering and measuring out all your ingredients so everything's ready to go.
  2. For the sauce, just mix the mayo, minced pickles, sugar, mustard, ketchup, and paprika in a small bowl. Give it a nice mix until everything's blended together and smooth. Once it’s all blended, cover it up and pop it in the fridge until you're ready to serve.
  3. Now, let’s cook the beef. In a skillet, add your ground beef, mustard, ketchup, salt, and pepper. Cook it over medium heat, stirring occasionally, until the beef is fully browned—this should take about 8 minutes. Make sure to drain any extra grease once it's done, so your egg rolls don’t get soggy.
  4. To assemble the egg rolls, lay each wrapper flat on a clean surface, with the corners facing you like a diamond shape. Sprinkle about 1 tablespoon of shredded cheddar cheese in the center. Next, add 3 tablespoons of the beef mixture, followed by 1 tablespoon of diced pickles on top.
  5. Now for the folding—bring in the sides first, then fold the bottom corner up nice and tight. Roll it up, and use a little water along the top edge to seal it shut.

Deep Frying Method:

  1. Line a plate with paper towels to soak up the grease later. In a medium skillet, heat about an inch of oil over medium heat. You’ll know it’s ready when small bubbles start forming. Carefully place your egg rolls in the oil, frying them until each side is golden brown, about 1 minute per side. Once they're crispy, transfer them to the plate to drain off any excess oil.

Air Frying Method:

  1. If you're going for the air fryer option, preheat it to 400°F. Place the egg rolls in and cook them for about 12 minutes, flipping halfway through so they crisp up evenly.
  2. Now, serve them up with that tasty sauce, and enjoy every crunchy, delicious bite!

Notes

Want to make these egg rolls gluten-free? It’s totally doable! Just swap out the regular egg roll wrappers for gluten-free ones. You can usually find them at specialty grocery stores or online. As for the sauce, be sure to double-check that your mustard, ketchup, and pickles are certified gluten-free (most brands are, but it’s always good to check!). With those easy swaps, you can enjoy all the same Big Mac flavors in a gluten-free version of this recipe—crispy, cheesy, and full of flavor without the gluten!
