Easy Banana Fritters

These easy banana fritters are made with ripe bananas, pancake mix, and a hint of cinnamon, creating a quick, sweet treat with a golden, crispy exterior. Perfect for breakfast or as a snack!

  • 2 ripe bananas peeled
  • 1 cup pancake mix approximately 125 grams
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup milk approximately 175 milliliters
  • Vegetable oil for frying
  • Confectioner's sugar for garnish

Prepare the Bananas:

  1. In a large mixing bowl, use a fork to thoroughly mash the peeled bananas until smooth, ensuring minimal lumps for a consistent batter.

Combine Ingredients:

  1. To the mashed bananas, add the pancake mix and ground cinnamon. Gradually pour in the milk while stirring continuously. Mix until all ingredients are fully incorporated, and a smooth, thick batter forms.

Heat the Oil:

  1. Pour a generous amount of vegetable oil into a deep skillet and heat over medium heat. The oil is ready for frying when a small drop of batter sizzles and rises to the surface immediately.

Fry the Fritters:

  1. Carefully spoon approximately one tablespoon of the batter per fritter into the hot oil. Allow each fritter to fry undisturbed until golden brown and thoroughly cooked, about 2-3 minutes per side. Flip the fritters gently to ensure even browning on both sides.

Drain and Garnish:

  1. Remove the fritters from the oil using a slotted spoon and transfer them onto a plate lined with paper towels to absorb excess oil. Once all fritters are fried, dust them with confectioner's sugar before serving.

Notes

To make these banana fritters gluten-free, simply replace the pancake mix with a gluten-free pancake mix or a gluten-free all-purpose flour blend. Ensure that all other ingredients, such as baking powder (if adding), are certified gluten-free.
