Ingredients

  • 1 1/4 c all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 very ripe bananas mashed
  • 1/2 c unsalted butter melted
  • 2/3 c sugar
  • 1 large egg
  • 1/2 tsp vanilla
  • 3/4 c sweetened flaked coconut

Instructions
 

  1. Preheat oven to 375°F. Line muffin cups with paper liners.
  2. Mix flour, baking powder, and salt in a bowl.
  3. In another bowl, combine mashed bananas, melted butter, sugar, egg, vanilla, and 1/2 c coconut.
  4. Add the dry ingredients to the banana mixture, stirring until just combined.
  5. Divide batter among muffin cups, sprinkle with remaining 1/4 c coconut.
  6. Bake for 25 minutes, until golden. Cool on a rack before serving.

Notes

To make these muffins gluten-free. Substitute the all-purpose flour. With a gluten-free flour blend. Make sure your baking powder. And other ingredients. Are certified gluten-free. The texture might be slightly different. But the flavors will be just as delicious. Using a high-quality gluten-free flour blend. That includes xanthan gum. Can help achieve a similar texture. To regular muffins. Ensuring they hold together well. And stay moist.
