Doritos Taco Salad

This Doritos Taco Salad combines seasoned ground beef, crisp romaine, kidney beans, tomatoes, cheddar cheese, and nacho cheese Doritos for a flavorful, crunchy twist on taco salad.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion finely diced
  • Salt and black pepper to taste
  • 1/4 cup water
  • 1 1/2 tablespoons taco seasoning mix
  • 1 15-ounce can dark red kidney beans, drained
  • 1/2 12-ounce bag nacho cheese-flavored corn chips (such as Doritos®), crushed
  • 1 large head romaine lettuce chopped
  • 1 1/2 medium tomatoes diced
  • 1/2 cup shredded Cheddar cheese or more to taste
  • 1/2 cup Catalina salad dressing or more to taste

Instructions
 

Cook the Ground Beef and Onion:

  1. Heat a large nonstick skillet over medium heat. Add the ground beef, diced onion, salt, and black pepper. Sauté, stirring occasionally, until the beef is browned and fully cooked and the onions are tender, approximately 10 minutes.

Season the Beef:

  1. Add 1/4 cup of water and taco seasoning to the skillet with the cooked beef. Stir thoroughly to coat the beef with the seasoning, and allow the mixture to simmer for about 1 minute, until slightly thickened. Remove from heat and set aside to cool.

Assemble the Salad Base:

  1. In a large salad bowl, combine the kidney beans, crushed Doritos, chopped romaine lettuce, diced tomatoes, and shredded Cheddar cheese. This forms the base of your salad with a balance of fresh and crunchy ingredients.

Add Beef and Dressing:

  1. Add the seasoned beef mixture to the salad. Pour in the Catalina dressing, starting with 1/2 cup and adding more if desired. Toss gently to combine all ingredients evenly without breaking the Doritos too much.

Serve Immediately:

  1. For optimal flavor and texture, serve the Doritos Taco Salad immediately after tossing to maintain the crispness of the chips.

Notes

To make this Doritos Taco Salad gluten-free, substitute the nacho cheese-flavored corn chips with a certified gluten-free version and ensure that the taco seasoning and Catalina dressing are also gluten-free.
