Ingredients

  • 1 c almond flour
  • 2 tablespoon powdered sugar or erythritol
  • zest of one lemon
  • scant 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 2 tablespoon butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 teaspoon lemon juice
  • optional powdered sugar or erythritol for rolling

Instructions
 

  1. Melt butter or coconut oil.
  2. Mix all ingredients to form a dough and roll into balls.
  3. For chewier cookies, refrigerate the dough balls until cold or overnight. Otherwise, you can bake them immediately.
  4. Preheat the oven to 325°F.
  5. Place the dough balls on a parchment-lined baking tray and bake for 10 minutes.
  6. Use a spoon to gently press the balls into cookie shapes while they are still warm.
  7. Let the cookies cool completely before handling, as they will firm up as they cool.
