Ingredients

  • 2 to 3 sleeves of saltine crackers
  • 1/4 c white sugar
  • 1 1/2 tsp ground cinnamon
  • 1 c 2 sticks unsalted butter
  • 1 c packed light brown sugar
  • 1 12 ounces package of white chocolate chips

Instructions
 

  1. Preheat your oven to 350°F. And line a large baking sheet. With foil or parchment paper. Lay the saltine crackers. In a single layer. Covering the entire sheet.
  2. In a small bowl. Combine the sugar. And cinnamon. Set aside.
  3. In a saucepan. Melt the butter. Over medium heat. Then stir in the brown sugar. Continue to cook until the sugar. Is fully dissolved. And the mixture. Starts to bubble.
  4. Once the mixture is bubbling. Let it cook. For an additional 2 minutes. Pour the mixture evenly. Over the crackers. Using a spatula if necessary. To spread it out.
  5. Place the baking sheet. In the oven. And bake for 5-7 minutes. Or until the sauce is bubbling. And has darkened slightly.
  6. Remove the tray. From the oven. And immediately sprinkle white chocolate chips. Over the top. Let the chips sit. For about 5 minutes to soften. Then spread them. Into an even layer. With a spatula.
  7. While the chocolate is still soft. Quickly sprinkle the cinnamon sugar mixture on top.
  8. Let the candy cool. For 30-60 minutes. Then break it. Into bite-sized pieces.
  9. Store in an airtight container. To keep it fresh.
