Ingredients

  • 1 2-pound bag of frozen diced potatoes
  • 1/2 c 1 stick butter, melted and divided
  • 1 16-ounce container of sour cream
  • 1 10.5-ounce can of cream of chicken soup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 2 c grated cheddar cheese
  • 2 c crumbled ruffled potato chips any flavor you like

Instructions
 

  1. Start by preheating your oven to 350°F. Then grab a 9x13-inch baking dish and give it a good coating of nonstick spray so nothing sticks later.
  2. In a big mixing bowl, toss together the diced potatoes, half of the melted butter, sour cream, cream of chicken soup, onion powder, garlic powder, parsley, and about half of the cheddar cheese. Stir it all up until everything’s mixed in nicely.
  3. Scoop that delicious mixture into your prepared baking dish and spread it out evenly. Sprinkle the rest of the cheese over the top. If you’re prepping ahead, you can cover it and pop it in the fridge until you’re ready to bake.
  4. When it’s baking time, sprinkle the crushed chips over the top. Drizzle the rest of the melted butter over the chips to get them extra crispy. Bake for 50-60 minutes, or until it’s all bubbly and the chips are perfectly golden.
  5. Once it’s out of the oven, let it sit for 5-10 minutes before diving in. Trust me, it’s worth the wait! Enjoy!
