This Creamy Pimento Cheese Chicken Bake. Is the ultimate comfort food. Tender, juicy chicken breasts. Are smothered in a creamy mix of cheddar cheese, mayonnaise, garlic, and pimentos. The top turns bubbly. And golden in the oven. While the chicken stays perfectly juicy underneath. This dish is simple to prepare. And so full of flavor. Making it a weeknight staple. In my house!

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 c mayonnaise
  • 1 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 2/3 c shredded cheddar cheese
  • 1 small jar of pimento peppers drained

Instructions
 

  1. Preheat the oven to 375°F. And lightly grease. A glass baking dish.
  2. Drain the pimento peppers. And chop them. Into small pieces.
  3. In a large mixing bowl. Combine the mayonnaise, garlic powder, paprika, salt, shredded cheddar cheese, and diced pimentos. Stirring until well blended.
  4. Place the chicken breasts. In the prepared baking dish. And generously spread the pimento cheese mixture. Over the top of each.
  5. Bake for 30-35 minutes. Or until the topping. Turns golden brown. And the internal temperature of the chicken. Reaches 165-170°F.

Notes
