  • 5.5 oz Chorizo finely diced
  • 1 small Red Onion finely diced
  • 1 small Red Bell Pepper finely diced
  • 4 cloves Garlic minced
  • 2/3 cup Chicken Stock
  • 1 tbsp Tomato Paste
  • 3.5 oz Cream Cheese
  • 14 oz Gnocchi
  • 1.5 oz Parmesan Cheese freshly grated (plus additional for garnish)
  • A handful of Fresh Basil coarsely torn

Prepare the Chorizo:

  1. Heat a small amount of oil in a large skillet over medium-high heat. Add the diced chorizo and sauté for 3–4 minutes until it begins to crisp. Stir occasionally to ensure even cooking.

Cook the Vegetables:

  1. Incorporate the finely diced red onion and red bell pepper into the skillet with the chorizo. Continue to sauté over medium heat for approximately 4 minutes, or until the vegetables are softened.

Add Aromatics and Sauce Base:

  1. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Lower the heat to medium and pour in the chicken stock. Stir in the tomato paste and cream cheese, ensuring the ingredients are well combined. Allow the mixture to simmer gently for a few minutes.

Prepare the Gnocchi:

  1. While the sauce simmers, bring a pot of salted water to a boil. Cook the gnocchi according to the package instructions, typically 2–3 minutes, until they float to the surface. Reserve a small amount of cooking water, then drain the gnocchi.

Combine Ingredients:

  1. Transfer the cooked gnocchi to the skillet with the sauce. Stir gently to coat the gnocchi evenly in the creamy mixture. Add the grated Parmesan cheese and fresh basil, mixing thoroughly. Adjust seasoning with salt and pepper as needed.

Serve:

  1. Plate the creamy chorizo gnocchi immediately, garnished with additional Parmesan cheese and fresh basil if desired. Serve hot to enjoy its full flavor.
