  • 8 ounces rotini pasta uncooked
  • 3 tablespoons unsalted butter
  • 1 pound chicken breast skinless and boneless, cut into bite-sized pieces
  • 2 tablespoons chili powder
  • ½ teaspoon red chili flakes
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 1 cup fresh tomatoes chopped
  • 6 green onions chopped
  • ½ cup fresh parsley finely chopped
  • 1 cup heavy cream or half and half
  • ½ cup chicken broth low sodium
  • 1 cup mozzarella cheese shredded

Prepare the Pasta

  1. Cook the rotini pasta in a pot of boiling salted water according to the package instructions until it is al dente. Drain the pasta and set it aside.

Cook the Chicken
